Recipe for Pea and Mint Puree
Here is the recipe for a delicious and refreshing mint-pea puree – perfect for 2 people!

For 2 servings, you will need:
1 shallot
250 g fresh peas
5 mint leaves
1 clove of garlic
1/2 organic lemon
some cream
some olive oil
to taste salt and pepper

 

Instructions:

  1. Finely chop the garlic clove and shallot and sauté them in a little olive oil until translucent.
  2. Add the peas and sweat them over low heat for about 5 minutes.
  3. Grate the lemon zest and add both the zest and 1 tablespoon of lemon juice to the peas. Let everything simmer for about 2 minutes.
  4. Puree the mixture with a little cream and season with salt and pepper.
  5. Finely chop the mint leaves and stir them into the puree. Garnish with whole mint leaves and serve.
