Microgreen Tomato Mozzarella Bread
For two servings you will need:
2 slices Bread
1/2 pad Arugula Microgreens
1/2 ball Mozzarella or vegan alternative
1 handful Cherry tomatoes
1 tbsp Rapeseed oil
1 pinch Salt and pepper
Here's how: 
  1. Heat oil in a pan and fry bread slices until crispy on both sides.
  2. Wash tomatoes, halve them, and place them on one of the bread slices.
  3. Slice mozzarella and place it on top of the tomatoes.
  4. Harvest microgreens and add them over the tomatoes and mozzarella.
  5. Season with a pinch of salt and pepper.
  6. Place the second slice of bread on top and press down gently. Halve the bread in the middle. Done!
