Basil Pesto
Homemade basil pesto tastes excellent with fresh pasta, on bread, or as a flavorful highlight on a Caprese salad. For our recipe, you only need a few ingredients and can whip up fresh pesto in no time.
Basil Pesto: Recipe with Parmesan and Cashew Nuts
Ingredients
approx. 50g fresh basil
approx. 50g Parmesan cheese
approx. 50g cashew nuts
2 cloves of garlic
approx. 150ml organic extra virgin olive oil
Preparation
First, toast the cashew nuts in a pan without oil over medium heat. As soon as they are lightly golden, transfer them to a bowl to cool.
Now it's time for the garlic. Peel and cut it into small pieces.
Put the basil, oil, and garlic in your blender and blend until everything is smooth and liquid.
Next, add the cashew nuts with a pinch of salt.
If needed, add a little more olive oil. The pesto should not be too dry.
Finally, add the Parmesan cheese. You can blend it again to your liking or simply stir it into the creamy mixture with a spoon.
