Healthy and sustainable
Imagine your salad traveling across Europe, then basking in supermarket light for a few days before you buy and eat it.
What initially sounds a bit like fantasy is often reality. This quickly adds up to thousands of kilometers in transport. Neatly prepared and displayed, vegetables and the like in the supermarket's fresh produce section still look fresh and appealing despite all this, but by then they are often anything but fresh. A head of lettuce quickly travels around 1,000 km before it gets there and has used 240 liters of water by harvest.
As if that weren't enough: vegetables and co. lose up to 50% of their nutrients per day, so due to long transport routes, hardly any of the valuable vitamins reach our bodies. Did you know that? In addition, our supermarket vegetables are usually grown using pesticides, which are anything but good for our bodies.
An alternative would be regional vegetables, but even here, transport routes and storage times, albeit shorter, have to be accepted. However, a major problem always remains the packaging material. Vegetables are still sold 60 percent packaged. Plastic, at 71 percent, is by far the most commonly used packaging material.
But what does the healthier and more flavorful alternative look like?
